Over the years I have been blessed with family and friends sharing delicious recipes with me.  So, I’d like to pass the blessing on by sharing some of our family favourites.

Here are a few of our favourite recipes that we serve in our home for family and friends to enjoy.

Baked Spaghetti Chee

Ingredients

1 c raw cashews
1 c water
⅓ c fresh lemon juice
2 T sesame seeds
4 T yeast flakes
1½ t salt
⅓ c oil (add slowly)
1 t onion powder
1⁄8 t celery seed
pinch garlic powder

Method

  • Whiz above ingredients in blender then add 1 large tin tomato soup.
  • Pour over pasta (250g pkt cooked)
  • Bake in oven at 180oC (350oF) for 30-40 minutes.

Carob Cake

Dry Ingredients

1 ½ c plain flour
3 t baking powder heaped (healthy one)
½ c carob powder
¾ c castor sugar (can use palm sugar as substitute)
pinch salt
1 T ecco heaped

Wet Ingredients

1 c soymilk
1 T lemon juice
1 t vanilla essence
½ c oil

Method

Put all dry ingredients in bowl and mix together.

  1. Put all wet ingredients in a separate bowl and stir till everything is mixed in.
  2. Pour wet ingredients into dry ingredients and whiz with electric beaters until smooth and creamy.
  3. Spray a cake tin and pour mixture in.
  4. Bake at 180oC for approx 30-35 mins.
  5. Leave in tray to cool a little and then tip onto rack and completely cool.
  6. Cut cake in half and spread jam on and put cream of your choice in the middle and on top.
Variation
Can cook mixture in a slice tray for a yummy carob slice or muffins.

Creamed Rice

Ingredients

6 c soy milk
7 T raw rice (basmati is good or arborio – rice used for risotto)
2 t vanilla essence
4 T sugar

Method

Put rice, sugar and vanilla into milk and bring to a boil.

  1.   Simmer until rice is soft.
  2.   Long, slow cooking will make it creamy.
  3.   Serve with preserved fruit and ice cream.
For a double recipe

3 litres (pkts soy milk)
1 2/3 cups rice
4 t vanilla essence
7 T sugar

If it is thick when ready to serve, just thin to desired consistency with soy milk.

Nut Cream

Ingredients

1 c cashews
1 c coconut cream
1 t vanilla essence
3 T maple syrup
½ c soymilk

Method

1.  Put all ingredients in blender and blend till very smooth.
